I'm pretty new with all this stuff, but i need to know if i buy a 31x11.50-15LT tire that will fit a 15x8 inch rim? and if it does cause i'm pretty sure it will, but wil that be rubbing quite a bit on an old 86 toyota pickup?

15x8 rim would be fine you will may get a little bit of rubbing but it wouldnt be much

what if i bought some 15x10 procomp steel rock crawlers? with like a 2 inch offset. would they rub more? even if there is that offset?
i just got this truck and i'm just starting to fix her up, but i am pretty new to this stuff.

31x11.5x15 on a 15x8 rim with 4" backspacing should be sufficient. You could probably even run them on a stock rim.
I don't see why you would need a 15x10 rim...thats seems a little overkill for that size of tire.

making the tire wider could cause more rubbing 31s would work on stock wheels

backspacing is the depth of the inside of the rim to the face of the mounting surface
